Burnt Sugar Cake and Icing
Melt 3/4 cup sugar in a cast iron skillet or heavy sauce pan until burnt, quite dark.
Add 1 Cup boiling water and simmer until mixture becomes syrup.
Cream 2/3 Cup butter and 1 1/2 sugar.
Add 1 Cup cold water and half of the burnt sugar syrup.
Add well beaten yolks of 2 eggs.
Dissolve 1 Tsp soda in 1 Tbsp of warm water and add to mixture.
Sift together 3 Cups flour and 1 Tsp baking powder.
Stir in flour mixture, then fold in well-beaten egg whites from the 2 eggs.
Pour into 2 greased and floured 9 inch cake pans and bake in a moderately slow oven.
Icing
Combine 2 cups sugar, 1 cup butter, 1/2 cup milk and remaining half of burnt sugar syrup.
Boil until mixture forms a soft ball when dropped in cold water.
Remove from heat.
Beat until cool and spread between layers, and on top and sides of cake.
If frosting hardens too quickly, a small amout of cream or boiling water may be added.
NOTE: Slow oven is 250 to 325 degrees
Moderate oven is 350 to 375 degrees.
I haven't baked this one yet so I am not to sure on the baking time, oven temperature will have alot to do with that.
