Pumpkin Cake

Near by mountains taken a few years back from a plane ride.
1-18 ounce yellow cake mix (reserve 1 cup cake mix )

1/2-Cup margarine, melted

1-Lg egg

1-Lg can pumpkin

3-Lg eggs

1/2-Cup brown sugar

2/3-Cup milk

1-Tsp cinnamon

1-Tsp nutmeg

1/2-Tsp cloves

1-Cup reserved cake mix

1/4-Cup margarine

1/4-Cup white sugar

1/2-Cup diced walnuts--optional

With all but 1-cup cake mix, blend together 1/2 cup margarine,melted and 1 egg.

Pat into bottom of 13x9 baking dish

Mix large can of pumpkin with 3 beaten eggs, add 1/2 cup brown sugar, 2/3 cup of milk and spices.

Pour over cake mixture in pan.

Blend the 1 cup reserved cake mix, 1/4 cup margarine, and 1/4 cup white sugar into crumb mixture. Sprinkle on top of pumpkin and add walnuts if used.

Bake at 350 degrees for approximately 1 hour

For those that are having a party over the Holidays you may want to go back in my archives and check the stuffing balls recipe and the sweet and sour sauce recipe for those finger foods as part of the snacks. The sweeet and sour sauce works great with both small meatballs, and little smokies. Merry Christmas and Have a great New Years.

Do you have anything on meatloaf or a good beef stew. We may need it over the next 2 days if this snow hits us! Thanks again Joe! Happy New Year!

I have a good one for hamburg stew and could easyly made into beef stew also have some for meatloaf which I never use a recipe for most things I cook, Give me a call and can tell ya about the stew and the meatloaf I will have to find them lol.
