Carrot Bars

4-Large eggs
2-Cups sugar
2-Tsp baking soda
1-Tsp salt
1 1/2-Cups flaked coconut
1 1/2-Cups diced walnuts
1 1/2-Cups veg oil
2-Cups flour
2-Tsp cinnamon
3-Cups grated carrots
Mix together all the above ingredients. Bake in a greased and floured 9 x 13 baking dish at 350 degrees for 25 to 30 minutes, Cool and ice with cream cheese topping.
Topping.
1-8 ounce pkg, cream cheese
1/2 cup butter or margarine
1-Tsp vanilla
1-1 lb box of powdered sugar (about 3 1/2 to 3 3/4 Cups sugar)
3/4-Cup coconut
Soften cream cheese and butter, Then mix all ingredients together and spread on carrot bars.
