Raspberry Chocolate Chip Bars

RIP, My Buddy Cody - Apr 2000 to Sep 2009
2 1/2-Cups flour

1-Cup sugar

3/4-Cup pecans

1-Cup butter or margarine

1-Large egg

1-Can raspberries (drained and reserve syrup)

2-TBsp cornstarch

1 2/3-Cups semi-sweet chocolate chips

In a sauce pan, combine cornstarch and the reserve syrup

Heat and stir until thickened, mix in the raspberries, set aside to cool

In a bowl stir together flour, sugar pecans, butter, and egg until crumbly

Set aside 1 1/2 cups of crumb mixture

Put remained crumb mixture into a 13 X 9 baking dish and press down ( grease the baking dish)

Spread cool rasberry mixture over the top

Sprinkle with chocolate chips

Then sprinkle reserve crumb mixture on top

Bake at 350 for 35 to 40 minutes until lightly brown

Cool in pan on a wire rack. Cut into bars and serve. Helps to put in the fridge before cutting, they will tend to fall apart.

Goes great with morning coffee/tea

Joe, good stuff. I know what I am going to make this weekend. So sorry about Cody Joe. He is in a better place now with no pain. Great photo. Take care.

So sorry to hear about the loss of your Cody. Pets are family and that is tough to take. May he rest in peace.

Thanks for all the nice comments especially about my lost of Cody, he was the family that lived with me daily 24/7.

Eagle Eye,

I am so sorry for your loss of Cody. I know you did everything you did to help him, just as I did last Feb. for Stripey, my 16 year old Shih Tzu.

It's hard to think about it right now but there is another puppy or older dog that NEEDS YOU to add he/she to your family.

As you noticed I have been involved in some interesting conversation almost like trying to pull a tooth with WAYL the last few days. I am glad I finally got more out of him/her tonight.

Again, I am so sorry about your loss of Cody.

Thank you everyone for the comments about my loss of Cody. He now sets in my living room in all his glory in a box, I truely do miss him. I spend most of his last night with me up just talking to him and watching him and wanted to do so much more for him and I couldn't. Thanks to my daughter he will always be with me and the glass/wood deal she also got with his paw print and name on it, I can't thank her more and I know when my time comes Cody will also go with me to my final resting place. The Vet send me a very nice card over it. When OM posted the loss of a pet and was waiting for me to check in, I waited until I got the last picture I had taken of Cody which was in July of this year, OM was talking about me and Cody, thank you so much OM what you posted, I have also printed it and its with the other things that Cody had. A BIG warm thank you to everyone that commented over my loss.

I'm so far behind on reading and posting. Joe, sorry to hear about this loss. I can tell he meant so much to you, and I am so glad that your daughter did what she did, and Tracey did what she did.
