Date Pinwheel Cookie

1 Cup shortening

2 Cups brown sugar

3 Large eggs

4 Cups flour

1/2 Tsp salt

1/2 Tsp baking powder

2 8 ounce packages chopped dates

1 Cup sugar

1 Cup water

1 Cup diced walnuts

Mix the shortening, brown sugar, eggs, flour, salt and baking powder. Mix dough thoroughly and chill over night

Once you make the filling, divide the dough into fourths, and then roll each one out in a rectangular.

Filling, Cook over a low heat until thick, 2 1/4 Cups chopped dates, sugar, water, and diced walnuts, stir often while cooking. Let the filling cool then spread onto rolled out dough. Roll the dough up and wrap in wax paper or plastic wrap and chill overnight.

Cut the chilled dough with the filling into quarter inch slices and bake on a sheet pan at 400 degrees for 15 minutes or golden brown
