1 Cup vegetable shortening
1 Teaspoon salt 1 Teaspoon lemon juice 1 1/2 Cups sugar 2 Large eggs 1 1/2 Cups crushed pineapple - drained 3 1/2 Cups flour 1 Teaspoon baking soda Mix salt, lemon juice and shortening until light and fluffy Mix in flour, baking soda and pineapple Drop by teaspoons full on baking sheet, if you like you can sprinkle a bit of sugar on them before baking Bake at 400 degrees 10 to 12 minutes, you may have to lightly spray the baking sheet with a vegetable spray. Thanks workingbee, they are good but I love pineapple so the recipe makes for a great cookie

Not giving ya a hard time, not the purpose of my blog but surely you didn't misplace the kitchen and have to wait on the wife to do the cookies. LOL. Give it a shot yourself and help your wife
