Pineapple Drop Cookies

1 Cup vegetable shortening
1 Teaspoon salt
1 Teaspoon lemon juice
1 1/2 Cups sugar
2 Large eggs
1 1/2 Cups crushed pineapple - drained
3 1/2 Cups flour
1 Teaspoon baking soda
Mix salt, lemon juice and shortening until light and fluffy
Mix in flour, baking soda and pineapple
Drop by teaspoons full on baking sheet, if you like you can sprinkle a bit of sugar on them before baking
Bake at 400 degrees 10 to 12 minutes, you may have to lightly spray the baking sheet with a vegetable spray.
You can also add a bit of the drained pineapple juice to the mixture if you like
