After writing a blog with a recipe, something dawned on me. Most of us that enjoy cooking comfort food seldom really need a recipe, just an idea and maybe some basic ingredients. Of course if all you've ever known is steak, chops and basic burgers and plain potatoes, then you may be in need of a recipe. You are NOT a red neck. Joke.
For an example, if I listed lean pork spare ribs, red potatoes, red onions, green apples and sauerkraut, most of you could figure out what to do those things to get a decent meal in one pot. Then again, maybe I'm wrong on that. If you need a little help, give a hollar and I'll aim you in the right direction. I work in road construction, those dastardly flaggers. My family roots go back to New England farms, not the big city. The last town I lived in when in California grew from 16K to 40K in 10 years, and that was enough to drive me out. I don't engage in or tolerate name calling. Name calling reduces an adult discussion to grade school play yard level.
I have never served in the military, but have family members who have, dating back to WW1. I am neither a Democrat nor a Republican. I am neither extremely Liberal or Conservative. I am raising my 16 year old grandson, not what I expected at this age, and dealing with those issues as well as my health and near retirement which are 2 things I intend to talk about. I decided to try my hand at this thanks to the warm welcome I have received on Mike's blog. When I take a position, I will defend it until I am shown that I am mistaken, and when that happens, I apologize. There are other things about me that will come out over time I'm sure.

Eating horse is a sin. I too have seen many many things growing up that most people would never imagine.
Dad, however, would never let us watch as he put an animal down.
He did make us butcher a chicken once. I don't even like to crush bugs, but I would kill one if I was hungry.
I would have to be starving to eat a horse though.

Ya' know what Horse tastes like? If you cook it right, it's kinda like bald eagle and border collie.
I know for sure I could have been a Pioneer Woman. I'm quite sure in fact, that I missed the ocrrect century. I've always thought that. I've never quite fit in here. Except when I wa able to spend summers at the ranch and in the Upper Country, using an outdoor potty and/or a bush, or just hide behind my horse's leg. Then, ahhhh...I was happy ....
And yes, I've killeed chickens.... seen stuff Bonnie that I guess is not for polite company.
Roy, THAT is how I was with my kids/nieces/nephews and now my Grandkids... not one of them isn't exactly sure I wouldn't rattle their teeth out of their heads and tan their hide. I've yet to do it, but they are quite convinced!
I am not too sure If I could have been a pioneer woman. To think about killing a chicken every day makes me kind of sick.
I don't even like to squash bugs.
I will spray them though.
The neighbor lady with the hatchet was kinda my second mom. Thing was, I wasn't convinced that she wouldn't use it on me. If you know what I mean.

I was in charge of getting them out of the coop, one at a time. My riggin' was a foot hook thing made out of old Forest Service telephone line. My job was to grab one foot and get the chicken out of the bunch, grab both legs and wing tips WITHOUT stirring the rest of the herd up too much more or breaking any bones. Then I was supposed to hand it off to the neighbor kid.
His job was to grab both feet, both wings and take the bird over to a block of wood where his Mom stood ready with a hatchet to dispatch the bird. Then it was turn loose of the bird and stand clear of "the chicken with its head cut off."
I suppose that chokin' 'em would have worked, but we were only about 10 or 11 years old and his Mom did have a hatchet.
We might have been a little young for chokin' chickens dontcha think? :-)
Wayne says "ya don't round up chicken, ya rope & choke it!" Then he goes on to tell me to "ask him about chokin' the chicken " Sorry for adult humor! *hangs head*

I wouldn't want to watch the rodeo "that I think would go on during the ROUNDUP of those 800 pound, free range chickens" without the .458.
As for Idaho wolves feasting on an 800 pound rhode island red, THAT I'd pay money for!!!!! :+)

But Coyotes and Wolves would have great dinners, NOT marinated in Coconut milk.... I'd be aggravated then...and might need to borrow Mikes pretty gun. Cuz, if I'm going to shoot a gun, I want "the Prettiest dang one there is"!

I have a plan for chicken now, thanks to you! I have to go buy chicken, cuz we're mostly beef eaters, ...go figure huh!? Too bad I can't raise an 800 pound chicken, and have it butchered just once.... but I'd have to have several of them running around! I actually have raised chickens, and don't mind, but I don't have a coop any more. Anyone got a coop for sale? lol. Maybe I'll build one this summer.
it is pretty inexpensive and it gives your chicken great flavor especially if you cook it in the crock pot.

I think that you could broil the meat, onions, and apples.
The sourkraut could be a side dish, but I would probably try broiling that on top of the meat just for kicks.
In our house, everything tastes better with cheese.
I use a lot of apple cider to cook meat with, it give it a sweet tender taste.
For Chicken, I use coconut milk.
If you have left over picnic ham from say Easter, take a few of the left over Easter eggs (2 per person), boil up some elbow macaroni, pick up a small bunch of green onions and a jar of chili sauce (I like Del Monte).
Take the ham off the bone, dice it into bite sized chunks. Dice two or three onions into 1/4" pieces from top to bottom. Slice the egg into 1/4" thick portions and then quarter them. If you want a hot meal, add the eggs, ham and onions to the warm pasta and pour the chili sauce over the top, then mix with a fork or pop it in the microwave for a few seconds.
The pasta can be room temp and it works just as well.
Sounds good also. The ingredients were from the the first German meal I learned to cook. Some of the others are much more complicated but yummy. This was described as your basic peasants meal from Bavaria.
Take away sauer kraut ... caramelize those onions...while simmering some with ribs, apples, brown sugar in cast iron overnight, after searing in hot oil to seal in flavor

If you don't like the strong taste of sauerkraut add a little brown sugar...
I never added flour, but that could be interesting. I've always just used the brine plus enough water so things just kind of simmer. Potatoes last, otherwise they get all mushy.
Sounds good to me. Add a little flour to make a sauce. I make my own vegetable broth
