Not sure how many out there are into Mexican Food. Me, I love the stuff. Even those things most "gringos" would never consider. The one sure winner in this house are Enchiladas. Beef and cheese, chicken and cheese or pork and cheese. Anything except just plain cheese. I gotta have MEAT! That being said here is my recipe if anyone is interested.
Chicken and Cheese Enchiladas.
1 lb. boneless skinless chicken cut into bite sized pieces. I prefer thighs, more flavor.
2 Med. onions chopped
1 pkg. Great Value taco seasoning
1 can Great Value chili ready diced tomatoes
ground pepper to taste
lots of shredded cheese of your liking. Cheddar and Jack here.
Just enough oil to keep things from sticking
Burrito sized flour tortillas
28 oz. can of El Patio Enchilada Sauce
Cook the onions till tender, add the seasoning mix, tomatoes, and chicken and ground pepper. Simmer till most of the liquid is mostly gone.
When this is done, I nuke the tortillas 1 at a time, fill the center with a good amount of filling, cover with lots of cheese roll up and place seam side down in a glass baking dish that is long enough so the rolled tortilla lays flat and that has been well coated with sauce.
Repeat 2 more times. Cover the Enchiladas with the rest of the sauce and cover with lots of cheese. Bake at 350 for about 30 min. Serve with rice and beans.
I never add any salt as the tomatoes and seasoning mix have plenty already.
This also works well with left over baked chicken.
