2/1/2-Cups mashed potatoes (Normally left overs)
1/2-Cup diced ham 1-Green onion finely diced 1/8-Teaspoon black pepper or to your taste 1/4-Canola oil 1/4-Cup flour In a bowl combine potatoes, ham, green onion, and pepper Using a 1/4-measuring cup fill cup with potatoes, dump out and make into a patty 1/2 inch thick. Put the flour in a shallow dish and dip the potato cakes in flour coating both side and tapping off excess. In a large skillet add 1/4-Cup canola oil on medium high until hot. Mashed potatoes were a staple at our house when I was growing up. Potato pancakes were a standard leftover product, but Mom evidently never thought of the added contents.
Since it's the holiday season, here is a kind of new twist on a candy recipe that the wife and her sister make eveery year. The recipe itself is one that was handed down through their family for at least three generations. The microwave makes it quicker, according to the Mrs. :
Cashew Brittle
½ C Karo Syrup (do not use Crystal Light syrup)
1 C Sugar 1 tsp Baking Soda
1 C Salted Cashews 1 tsp Vanilla
1 Tbl Butter/Margarine
In a large microwave safe bowl, combine syrup, sugar. In a 1800 to 2000 watt microwave, Cook on 70% for 5 minutes. Stir and add the cashews, cook at 70% for 3 minutes. Add Butter and Vanilla, cook 1 minute longer at 60%. Add Soda and stir. Pour onto an oiled cookie sheet or oiled aluminum foil.
BE VERY CAREFUL when you add the soda, as the mixture foams up and can cause some nasty burns!
Same here Warren always had potato cakes with the leftovers, nothing added to them just made into patties and brown on both sides which is always the way I have been doing it. Ran across this receipe and it looked good with the added stuff. There is a number of ways of doing them some even have corn added to the cakes.
Love Cashews but don't care much for brittle. Sure there is a number of people on here that will like that receipe, thanks for adding it in.

At this writing, there are 42 containers with dozens of different kinds of fudges, divinity and other sugary treats in the spare room waiting to be made into candy trays for family and friends. Not counting several different nut brittles and one big roasting pan of butter toffee.
It's the thought that counts.... :-)

our mom used to take leftover potatoes, a little hamburger, an egg or two and some catsup to make a potato patty. She cooked it on the griddle it was quite good.

Hey Keith did you do the Ham fritters, if so how did they turn out for you. Always curious when someone trys a recipe I post and how it went for them.
Not to worry, Joe, the candy is made. All 45 kinds!
The wife and her sister started last Tuesday at about 8AM and finished up Saturday about noon, with help from the kids and grandkids.
Later this week, we'll set up an assembly line to put together the plates we'll hand out before Christmas. Each plate gets at least one piece of each recipe. Some of the recipes have been handed down thru 5 generations that I know of. Some are "creations" that the girls have come up with.
I've been sampling the cashew brittle every day, but the wife has to hide the butter toffee(my personal favorite) so there will be some to hand out!
Wondering how I'm gonna steal one of those plates!

Joe, I did try it and it was outstanding! Of course I love anything with ham and onions.... and beer... and bacon for that matter :)
Typing that just put me in the mood for a big bowl of bean soup and sweet cornbread! Guess I better make a run to the grocery.
