Cake 3-Eggs 1-Cup sugar 2/3-Cup pumpkin 3/4-cup flour 1-Teaspoon baking soda 1/2-Teaspoon cinnamon 1-Cup diced walnuts. Extra powdered sugar, for dusting Filling 8-ounces cream cheese softened 1-Cup powdered sugar 1-Tablespoon unsalted butter, room temperature 1-Tablespoon vanilla Directions Preheat oven to 375 degrees Generously grease a jelly roll pan, place a piece of wax paper on it and grease that as well Place the eggs and sugar in a large bowl and blend with a mixer until creamy and sugar is dissolved. Add pumpkin, baking soda and cinnamon. Mix until just combined Pour batter into jelly roll pan, sprinkle walnuts evenly over top of batter. Bake for 15 minutes While the cake is baking spread a tea towel on counter and sprinkle a generous amount of powdered sugar over the towel about about the area of jelly roll pan (This works best by putting a couple tablespoons of powdered sugar in a small strainer and shaking it gently over the area of the towel) When the cake is done, turn onto the sugared towel, carefully peel away the wax paper, and loosely roll the cake in the towel Set aside for 20-25 minutes While the rolled cake is resting, prepare the filling. beat together the cream cheese, powdered sugar and butter until creamy. Then mix in the vanilla. Unroll the cake and spread the filling evenly over the entire surface to within about 1/2 inch from the edges. Re-roll the cake, firmly but gently so the filling doesn't get squeezed out making sure there are no air pockets inside. Wrap tightly in aluminum foil and freeze Slices best when frozen, allow slices to sit a room temp for about 5 minutes before serving Will keep, frozen for several months tightly wrapped with foil. Jessie, I don't know how old this computer is, it was given to me.. I think I still have plenty of memory and the hard drive is big enough. I am using windows XP.
I could use the help if you want to come by. Have no idea what you schedule is but Tue or Wed nites are best for me or on the weekend.

This looks really really yummy! I don't have a Jelly Roll Pan so can it be made without that kind of pan? What about using a cookie sheet?
I read a statistical report some time ago that claimed, "a controlled study of the attractiveness of scents, recorded that the smell a cooking pumpkin pie was the scent most alluring to men."
From a personal standpoint, I don't ever remember any of my girlfriends ever splashing themselves with Eau de punkin; but, I love coming home to the scent of pumpkin-roll cooling from the oven. It makes dessert extra special.
If you don't believe me, heat up some chocolate (the scent of cocoa being the most attractive to women, according to the same study), and pour the dark liquid over the pumpkin roll. Oh yeah, what you don't have time to eat, your dogs will lap off the plates.
I don't have a laptop so that is out. Thanks for the offer tho.

Wasn't trying to scare you off, it not that hard to do. Removing it from the pan, and rolling it up the first time just have to use a bit of care and it will work out. Besides it can be frozen and should be to cut, so following the recipe you would know how it turned out and make it in advance and leave it in the freeze until the Peeps time. So go for it.
That does it, I won't try something like that when a few people are coming. The pressure would be too much for me!
No Roy I haven't even worked on trying to do the picture program, you can put one picture on your blog entry.
It is good Bonnie, I have never made it but my youngest has and I always enjoyed it.
Jessie it does take a bit of work to get it to turn out all in one piece.
I love pumpkin pie and cookies, this might be my next favorite! If I was good, I would make it for our Peeps meeting.... (but I bet I'm too lazy/unorganized to do it)
