4-Cups flour
2-Cups sugar 2-Tsp baking powder 2-Tsp baking soda 2-Tsp cinnamon 1 1/2-Cups shortening 1-15 ounce can pumpkin 2-Large eggs 2-Tsp vanilla 1/2-Cup chopped/diced walnuts Combine flour, sugar, baking powder and soda, and cinnamon. Add shortening, pumpkin, eggs and vanilla. Beat for 2 minutes and stir in 1/2 cup chopped/diced walnuts Drop on greased cookie/baking sheet. Bake at 375 degrees for 12 to 15 minutes Frost with powdered sugar glaze and sprinkle with cinnamon Note: another one of those recipes that I haven't done yet. The recipe doesn't include what the glaze recipe is so if anyone needs that I will have to research it or if someone else out there already knows post it to my recipe post. You could be right there on the hot buttered rum thing. However, I am in the process as we speak of baking another batch. They are addicting! And I have tried some of your other recipes. No where near as fun, although they were good. I can't tell you how much fun I had going around sharing and if only for a few minutes, was able to connect with people that I usually wave at in passing. And so, that is how the stir was caused in my neck of the woods. So to speak.
LMAO mountainmiss, never figured a recipe would cause such a stir in your neighborhood, must be the hot buttered rum that did it not my cookie recipe LOL, don't know how long you been looking at my blog but if you check the archives on me, you can see other recipes for cookies.
Dear Joe - It is all your fault. The pumpkin cookies are all gone. Greedy neighbors. Word got around and I have been wandering aimlessly around the neighborhood, empty cookie basket in hand, slightly tipsy from one too many hot buttered rums. Shame on those people!
I am making more today! Cookies.

They won't last long at my house or the Hot Buttered Rum either.... I would be wobbling to bed. lol !

No reason mountainmiss you can change a few things, I do it all the time, I came across a recipe in one of my books for pumpkin cake and the cream cheese frosting surely will work well with that, with the cookies be hard to store them but if you do them in a single layer that will work. Enjoy the hot buttered rum lol.
I am making the cookies today. Am substituting pecans for the walnuts and am going to make a cream cheese frosting. While forcing myself to drink a mug of hot buttered rum. Or 2.
Joe, this is a bit different from the one I used. It already calls for more sugar. (The other one only called for 4 TBsp) And the melted butter will add a bit of smoothness I think. I'm excited! I'm with you, I don't love cornbread, but Wayne does, so if I'm gonna make it, I wanna at least somewhat enjoy! (Scout has been enjoying the leftovers..heeeheee )

Jessie, I have only made cornbread once and it was a box mix, I don't much care for it but I looked and came across this recipe from one of Mom's books:
Corn Bread
3/4-cup cornmeal
1-cup flour
1/4-cup sugar
3-tsp baking powder
1/2-tsp salt
1-cup milk
1-Large egg beaten
2-tbsp butter, melted
Put 2 tbsp butter in a small saucepan, melt over a low heat.
Measure cornmeal, flour, sugar, baking powder, and salt into a large mixing bowl, and mix well
Add melted butter, milk and beaten egg to flour mixture and mix well.
Spoon into greased 9 inch baking dish/pan and spread evenly with the back of the spoon.
Bake at 425 degrees for 20 minutes.
Remove from oven let cool a bit and cut into squares
If you want it a bit sweeter then add a bit more sugar. Don't know how this will work out for ya but let me know what the outcome is.
Joe, I made cornbread the oher day,and was not very impressed with it. Do you have any super recipies that I might try? Mine was OK. Just rather cornbready I guess. I thought it needed to be sweeter, and less just cornbready. I just used the recipe off the back of the box. Everyone else said it was good, but what else are they gonna say? Help!

Joe Your recipes have been making me have a sweet tooth attack so I made some fudge. lol ! Next time I go to the store I will pick up a can of pumpkin and brown sugar for sas212's glaze recipe and give it a try.

If you don't mind, EE, I found a maple glaze for these cookies that I think I'll try with your cookie recipe.
Maple glaze
1/2 cup butter (no substitutes)
1 1/2 cups packed brown sugar
1/4 cup milk
1 teaspoon maple flavoring
1/2 teaspoon vanilla extract
2 cups confectioners' sugar
Combine the butter, brown sugar and milk in a saucepan. Bring to a boil over medium heat, stirring constantly; boil for 3 minutes. Remove from the heat; stir in maple flavoring and vanilla. Cool slightly; beat in enough confectioners' sugar to achieve spreading consistency. Remove cookies to wire racks; frost while warm.
If I'm not mistaken, by a glaze, they probably mean a 'royal icing' which is a cup of powdered sugar and about a tablespoon of milk-it makes an icing that stiffens up nicely but doesn't harden. I had a recipe like this many years ago and it had a maple flavored glaze...I'm going to give that a try with this recipe-yummy sounding, huh? Thanks EE!
Since Pat retired he does all the cooking and baking. lol ! I only cook or bake when I want to. I'm now getting him to clean so I can have more time on the computer...... HA !
I haven't had Hot Butter Rum in years either. The last time I felt like having a cup the batter was rock hard. lol !
MsM, you trying to tell me hubby does the cooking around your place LOL, I do like egg nog with brandy and nutmeg sprinkled on top and hot buttered rum I haven't had in years but did enjoy it, maybe I need to pull out Old Mr Boston here and see just what drinks are there for the holidays lol.
Ha Ha well I guess that will have to do ! How about Egg Nog or Hot Buttered Rum for Christmas?
