Chocolate Zucchini Bread

Shadow just before becoming my daugthers Lab, he's now close to 30 lbs.
2-Cups sugar

3-Eggs

1-Cup oil

1-Tsp baking soda

1-Tsp cinnamon

1-Tsp vanilla

2-squares unsweetened melted choclate or 6-TBsp cocoa and 2-TBsp margarine or butter

3-Cups grated zucchini

3-Cups flour

1/2-Cup chopped nuts, optional

Seeing as I like pineapple so much in the zucchini bread I will also add 10 ounces of drained crushed pineapple

Mix all indgredients well and put into 2 each greased and floured bread pans.

Bake at 350 degrees for 45 to 50 minutes or until a toothpick comes out clean

Jessie, you will have to let me know how it turns out, I have never made this one but dug it out of one of my Mom's old cook books. I am going to try it soon sure sounds good to me LOL.

This is a very good recipe. I do not even like zucchini! My mom makes it all of the time during the summer! You can use the same recipe to make it into a cake. Our family uses cream cheese for a topping or as the frosting for the cake! You will not be disappointed.

Bassmaster, I don't really care for zucchine myself but I do like it in the zucchine bread and the cobbler which I have been doing the bread for a number of years now. There's alot of ways to fix zucchini and most are not to my likely, The cake using it sounds intersting. Thanks for the comment.

Hey Joe I finally got around to making your first Zucchini recipe you posted on here. Eating a slice of it now as I type.......Yummy ! Came out very moist. A friend is going to give me some more Zucchini so soon as this one gets eaten I am going to try out your cobbler recipe. Maybe some of the Obama bashers will throw some at me and then I will have some to put in the freezer! lol !

Marylin, I don't think many will be throwing zucchini your way, most that grow it don't throw it around LOL, Glad you enjoyed the bread, I enjoy it with my coffee in the morning. Thanks for the comment.

Well, Joe, I did the chocolate zucchini bread. I like it, but I believe I like just zucchini bread better. Just me

BUT I did your 'Quick Chicken Fried Steak" last night, and loved it. I had never been able to get the breading to stay..... thanks!
