Was the Kinuza Bridge in Pa.
2-Cups diced celery 1-Lb 92% hamburg 1-Cup diced onion 1-Cup diced green bell pepper 15-ounce can of diced tomatoes (or your own fresh once in season) Salt and pepper Slice the potatoes Place in order given in layers in a greased shallow baking dish Season each layer with salt and pepper to taste Bake about 2 hours at 350 degrees Comments Showing comments in chronological order [Show most recent comments first] |

Wow EE-that's a beautiful photo! Did you take that? Absolutely incredible.
No, I didn't take the picture but have been on the bridge so many times and have seen the tree's turning colors. Been out on it, below it and played on it so many years ago. Always had fun making plane airplanes and throwing them off of it and see how far down the valley they would go but thats all gone now. Its a part of my history and now its all gone laying in the valley in pile of twisted steel and wood. I do have a piece of the hand rail with a clock in it after it when down so guess I will always have a piece of it.

I did this recipe last night and it was great! I made one change though, and used a 15 oz can of Rotel diced tomatoes, since I had them. This smelled wonderful while cooking, was quick to prepare, and was ready when I came in from playing/working with my horses (on a beautiful day!) A complete satisfying meal in one pan, that I will do again ...

Jesssie, thanks for the comment, as far as what you already found recipes of this type can be changed to anyone's fancy, ie like carrots for celery, maybe corn instead of the tomatoes, choice is always up to the cook. Glad you enjoyed it.
