Quick Chicken Fried Steak

Posted Thursday, February 12, 2009, at 1:44 PM

(Photo)
1-Package cube steaks (normally come in 2 to a package )

Enough flour to coat both sides of the cube steaks

2-Large eggs

Cooking oil

Cracker or bread crumbs, enough to coat both sides of the steaks

Put the cube steaks on a piece of wax paper single layer, salt and pepper to taste. Coat one side of the steak with flour, turn over and coat the other side, put another piece of wax paper on the steaks and lay a cutting board on the steaks until the flour is soaked into the steaks

Put enough cooking oil in skillet to cover the bottom and heat.

Whisk the 2 eggs

Put the eggs in one shallow dish and the crumbs in another

Dip the steak into the whisked eggs, then into the crumbs, drop them carefully into the hot oil. Brown on both sides turning only once.

I like to serve them with mashed potatoes, country gravy and a veggie, and warm french bread or warm roll always a plus.

Thanks hope it works for you, key points is to get the flour into the meat, then the egg coating and let the extra run off then into the crumbs and the oil hot enough for the steak to sizzle once it is put in the oil. Another thing you can do is whisk your eggs and put them on a plate and put the crumbs on a seperate plate and push the meat into the crumbs. If you have any questions let me know
