Potato Cakes

5-medium sized potatos peeled

1-Large egg

1-TBsp parsley flakes

1-Tsp coarsely ground pepper or to your taste

1-Tsp salt or not even needed

1/4-Onion diced but is optional item

Shred the tators.

Whisk the egg

In a bowl mix all the ingredients

Pack by TBsp full removing some of the liquid that will form with the mixture

Drop into hot cooking oil, temp of oil works best at 300 to 325 degrees

Brown on both sides

Drain on a paper towel

If you like then put them on a baking sheet in a warm oven until you get them all fixed just to keep them warm

The way to serve them is up to you what you would like with them.

Came on a similar recipe recently...it adds minced garlic. Quite good. But mine get cold because I didn't think about keeping them warm in the oven. Thanks for the reminder!

Never came to me to use garlic also, as much garlic powder I do use will have to try the minced garlic or the powder. Cody just being Cody and is doing fine LOL.
