Banana, Nut, Pineapple, Bread

3 Cups flour

2 Cups sugar

1 Tsp baking soda

1 Tsp ground cinnamon

3/4 Tsp salt

1 Cup diced walnuts

1 Cup canola oil or vegetable oil

3 Large eggs beaten

2 Cups mashed ripe bananas (4 bananas about right)

2 Tsps vanilla

1 8 ounce can unsweetened crushed pineapple drained (I like pineapple so I use the 20 ounce can)

Preheat oven to 350 and lightly grease and flour 2 to 3 loaf pans

In a large bowl, combine flour, sugar, baking soda, cinnamon, and the salt

Stir in the walnuts

In a seperate bowl, mix eggs, oil, banana, vanilla, and pineapple until well combined

Pour equal amounts into pans ( fill the pans about half full that helps to tell how many pans and the size you use) I use 4 x 8 bread pans and get 3 loafs

Bake for about 1 hour or until toothpick in center comes out clean ( After 55 minutes of baking time keep a close eye on it, only takes about 5 minutes to burn it as I found out)

Cool for a few minutes on racks and then remove from pans and continue cooling (Once it cool can be wrapped in foil and put in a freezer bag and froze)

Cody looks like he's having a ball! Today's recipe is really a winner -- we did the taste test! Thanks, Joe, you're really one in a million.

Our lab loved the snow -- he'd just grin and push a trail ahead of him in it or grab a mouthful and toss it in the air, and roll around in it too.
