Pumpkin Bars wih Cream Cheese ToppingPosted Tuesday, November 25, 2008, at 2:10 PM
1 16 ounce can of pumpkin
4 Eggs 1 Cup chopped walnuts 1 Tsp baking soda 2 Tsp baking powder 2 Tsp cinnamon 1 Cup oil 1 2/3 Cups sugar 2 Cups flour 1 Tsp salt In a mixing bowl beat together eggs, sugar, oil, and pumpkin until light and fluffy. In a separate bowl stir together flour, baking powder, baking soda, cinnamon,and salt Add to the pumpkin mixture and mix thoroughly, Spread batter in ungreased 10 x 15 baking pan Bake at 350 degrees for 25 to 30 minutes Cool and frost with cream cheese icing and sprinkle on the chopped walnuts Cream Cheese Topping 1 Tsp Vanilla 1/2 Cup butter softened 1 3 oz cream cheese softened 2 Cups powdered sugar Mix together cream cheese and butter, Stir in vanilla and powdered sugar a little at a time, beating until smooth and creamy.
